Bittersweet Chocolate & Orange Muffins

Ingredients
  • 1½ cups all-purpose flour
  • ½ cup sugar
  • 2 tablespoons cocoa powder
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 egg
  • ½ cup buttermilk
  • ½ cup orange juice
  • ½ cup vegetable oil
  • 1 teaspoon orange extract (or 1 teaspoon pure vanilla extract plus 1 teaspoon finely grated orange zest)
  • ½ cup bittersweet chocolate, chopped
Instructions
  1. Preheat the oven to 375 degrees. Grease 12 muffin cups with nonstick cooking spray, or place liners in the cups and lightly spray the liners. Set aside.
  2. In a mixing bowl, stir together the flour, sugar, cocoa powder, baking powder and salt. Set aside. Place the egg, buttermilk, orange juice, oil and extract in the bowl of an electric mixer. Beat until well blended. Add to the flour mixture and stir until just moistened. Fold in the chocolate and fill the muffin cups two-thirds full.
  3. Bake 17–20 minutes or until a tester inserted in the center comes out clean. Cool in the pan for 10 minutes on a wire rack. Remove from the pan and cool completely or serve warm.
