Fresh Mango Salsa

Ingredients
  • 4 ripe mangoes, peeled, pitted and diced
  • 1 small red bell pepper, seeded and finely chopped
  • 1 small jalapeño pepper, seeded and finely minced
  • ½ medium purple onion, chopped
  • Juice from 2 limes
  • ¼ cup coarsely chopped fresh cilantro
  • ¼-½ teaspoon salt according to taste
Instructions
  1. Place 1 mango in a food processor and purée. Transfer to a mixing bowl and toss with the remaining mangoes, bell peppers, jalapeños, onions, lime juice, cilantro and salt. Cover and allow to meld for 1 hour. Stir again and serve.
