Coconut Butter Bars
  • 1½ sticks unsalted butter, softened
  • 1 cup sugar
  • 1 cup coconut butter*
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon salt
  • 2 cups all-purpose flour
  • 2 cups sweetened flaked coconut
  • Powdered sugar
  1. Place rack in the center of the oven and preheat to 350 degrees. Lightly grease a jellyroll pan and set aside.
  2. In the bowl of an electric mixer, beat the butter and sugar at medium speed until fluffy, about 2 minutes. Add the coconut butter and beat until well combined, then add the egg, extract and salt. Add the flour a half-cup at a time, then the coconut.
  3. Spread evenly in the prepared pan. Bake for 20–25 minutes or until a tester comes out clean. Cool completely in the pan on a wire rack. Sprinkle with powdered sugar before serving.
