Fresh Cherry Dessert Topping
- 2 tablespoons unsalted butter
- 5 cups fresh cherries, pitted
- ¾ cup sugar
- ½ cup kirsch or cherry brandy
- ½ teaspoon pure almond extract
- Heat the butter in a large saucepan over medium-high heat. Add the cherries and sauté 5 minutes. Stir in the sugar and sauté 3 minutes more.
- Immediately remove from heat and add the brandy and extract. Mix well. Cool to room temperature, then use or refrigerate for later use.
