Roasted Cauliflower (or Broccoli)
 
Ingredients
  • 1 head cauliflower or broccoli
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
Instructions
  1. Preheat the oven to 375 degrees. Lightly grease a jellyroll pan and set aside.
  2. Cut the cauliflower or broccoli vertically into ¼-inch slices. Arrange in a single layer on the prepared pan. Drizzle evenly with the oil, then sprinkle with the salt and pepper.
  3. Bake 35 to 45 minutes or until golden brown. Flip if desired half way through the cooking time. Serve warm.
