Chilled Date Cake

Ingredients
  • 3 eggs, separated
  • ¼ cup granulated sugar
  • 1 teaspoon pure vanilla extract, divided
  • ⅓ cup all-purpose flour
  • ¼ teaspoon salt
  • ¾ cup finely chopped pecans
  • 1 cup chopped dates
  • ½ pint heavy cream
  • ¼ cup powdered sugar
Instructions
  1. Preheat the oven to 350 degrees. Grease and flour a 9-inch round cake pan and set aside.
  2. In the bowl of an electric mixer, beat the egg whites at high speed until stiff. Set aside.
  3. In a separate mixing bowl, beat the egg yolks, granulated sugar and ½ teaspoon of the extract for 2 minutes, until thick. Stir in the flour and salt, blending well. Add the pecans and dates, then fold in the egg whites. Transfer to the prepared pan and bake 30 minutes or until the surface springs back when lightly touched. Cool completely in the pan on a wire rack, then invert onto a serving plate.
  4. Whip the cream at high speed of an electric mixer, adding the powdered sugar a tablespoon at a time. Add the remaining extract. Spread over the top of the cake, cover and refrigerate at least 1 hour. Serve cold.
