Baby Spinach and Date Salad

Ingredients
  • 3 cups baby spinach
  • ½ cup chopped pitted dates
  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
Instructions
  1. Place the spinach in a serving bowl and set aside. In a jar with a tight-fitting lid, combine the dates, orange juice, lemon juice, oil, salt and pepper. Cover and shake well to emulsify. Pour over the spinach and toss to evenly coat. Serve immediately.
