Banana Fritters Recipe

- peanut oil for frying
- 2 eggs
- 1/2 cup milk cold
- 3 tablespoons gluten-free light brown sugar firmly packed
- 1 cup all-purpose flour
- pinch baking powder
- 4 bananas ripe, sliced on the diagonal 3/4 -inch thick
- 2 tablespoons powdered sugar
Instructions
- Place 1 inch of oil in a deep medium skillet and place over medium-high heat. Meanwhile, in a mixing bowl, whisk together the eggs, milk, brown sugar, flour and baking powder until smooth. Add the banana slices and gently coat. Spear each slice with a fork and transfer to the hot oil. Only fry about half of the bananas at a time so you don’t overcrowd the pan. Fry until lightly browned on both sides, about 3 minutes. Transfer to paper towels to drain and repeat with the remaining bananas. Transfer the fritters to a warm serving plate and sprinkle with powdered sugar. Serve immediately.
