Spiced Just Right Crowder Peas Recipe

Ingredients
- 1 tablespoon peanut or canola oil
- 1 onion peeled and cut in half
- 1 carrot cut in half lengthwise
- 2 stalks celery cut in half
- 2 cloves garlic peeled
- 4 cups water
- 4 cups crowder peas fresh
- 2 tablespoons ham stock concentrated
- 2 sprigs thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place the oil, onions, carrots, celery and garlic in a large Dutch oven over medium-high heat. Cook, stirring often, for 5 minutes. Add the water, peas, ham stock, thyme sprigs, salt and pepper. Bring to a boil, then reduce the heat to low and simmer 20 minutes or until the peas are tender. Remove from the heat and cool 10 minutes. Drain the peas, reserving 1 cup of the cooking liquid. Remove and discard the onions, carrots, celery, garlic and thyme. Place the peas in a serving bowl with the reserved cooking liquid. Serve warm.
