Fresh Mushroom Spread

Ingredients
- 2 tablespoons olive oil
- 1 small sweet onions peeled and chopped
- 1 clove garlic peeled and minced
- 1 8-oz package sliced mushrooms
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 2 tablespoons gluten-free soy sauce
- 1 1/2 teaspoons rice vinegar
- 2 tablespoons fresh parsley chopped
Instructions
- Place the oil in a large skillet over medium-high heat. Add the onions and sauté around 2 minutes. Add the garlic and sauté for 30 seconds longer. Add the mushrooms, salt, black pepper and cayenne and cook, stirring often, for 8 minutes. Add the soy sauce and vinegar and cook 2 minutes longer. Add the parsley and stir to combine. Transfer to a food processer and process until the mixture is fully combined and fairly smooth. Taste and add more salt and pepper if needed. Serve with gluten-free crackers or carrot sticks.
