Fried Pumpkin Recipe

Ingredients
- 1 1 1/2 pound pumpkin peeled, seeded and sliced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons all-purpose flour
- 1 egg beaten
- 2 tablespoons dry unseasoned breadcrumbs
Instructions
- Place 1 inch of oil in a large cast iron skillet and place over medium-high heat. Meanwhile, sprinkle the pumpkin slices evenly with the salt and pepper. Dip them in the flour, then the egg and finally the breadcrumbs. When the oil in hot, add the slices to the skillet and fry 5 minutes on each side or until golden brown. Do not crowd the pan, so work in batches if necessary. Drain on paper towels and serve warm.
