Ham it Up Potato Salad Recipe

  1. Place the potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat. Boil 11 minutes or until tender. Drain and let cool completely. Transfer to a serving bowl and gently stir in the ham, parsley, dill and onions. In a small bowl, whisk together the vinegar, oil, mustard, garlic, pepper and salt. Add to the potato mixture and gently toss to coat. Serve immediately or refrigerate up to 2 hours before serving.
