Ham it Up Potato Salad Recipe

Ingredients
- 2 pounds small red potatoes
- 2 cups cooked diced ham
- 3 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh dill
- 4 green onions chopped
- 1/3 cup red wine vinegar
- 1/2 cup olive oil
- 2 teaspoons yellow mustard
- 2 cloves garlic peeled and minced
- 1/4 teaspoon white pepper
- 1/4 teaspoon garlic salt
Instructions
- Place the potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat. Boil 11 minutes or until tender. Drain and let cool completely. Transfer to a serving bowl and gently stir in the ham, parsley, dill and onions. In a small bowl, whisk together the vinegar, oil, mustard, garlic, pepper and salt. Add to the potato mixture and gently toss to coat. Serve immediately or refrigerate up to 2 hours before serving.
