Sweet Potato Salad Recipe

Ingredients
- 2 pounds sweet potatoes peeled and cut in 1-inch pieces
- 2 teaspoons ground cumin
- 1/4 teaspoon salt
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1/4 teaspoon hot sauce
- 1 cup red bell pepper finely chopped
- 1/2 cup chopped fresh cilantro
- 1/2 cup thinly sliced green onions
Instructions
- Place the potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat. Boil 11 minutes or until tender. Drain and let cool completely. In a small bowl, whisk together the cumin, salt, oil, lime juice and hot sauce. Place the potatoes in a serving bowl and add the peppers, cilantro and onions. Add the dressing and gently toss to coat. Serve immediately or refrigerate up to 2 hours before serving.
