Quick Corn Relish Recipe

Ingredients
- 3/4 cup sweet corn kernels
- 1/2 cup Roma tomatoes diced
- 1/4 cup sweet onions diced
- 2 tablespoons red wine vinegar
- 1 tablespoon extra virgin olive oil
- 1 tablespoon chopped fresh cilantro
- 1 teaspoon garlic salt
- 1/2 teaspoon black pepper
Instructions
- Place the corn, tomatoes and onions in a serving bowl and toss gently to combine. In a jar with a tight-fitting lid, combine the vinegar, oil, cilantro, salt and pepper. Shake to emulsify and drizzle over the corn mixture. Allow to stand at room temperature at least 30 minutes. Gently stir again and serve.
