Roasted Winter Squash Recipe

    1. Preheat the oven to 350 degrees. Place the whole squash on an ungreased jelly roll pan. Set the timer for 20 minutes for small to medium squash and 30 for large. Remove from the oven and cut in half or cube, removing and discarding the seeds as you go!
    2. If you don’t have a recipe in mind, coat the jelly roll pan with cooking spray and place the squash in a single layer. Drizzle with olive oil and sprinkle evenly with salt and pepper.
    3. Return to the oven for 20-30 minutes. The squash is done when a cake-tester or knife blade is easily inserted.
