Summer in a Bowl Salad Recipe

  1. In a serving bowl, combine the shrimp, watermelon cubes, shallots, avocados and peppers. In a jar with a tight-fitting lid, combine the oil, juice, honey, salt, pepper and chopped cilantro. Shake well to emulsify. Drizzle over the salad and toss to evenly coat. Set aside for 30 minutes to meld before serving with a cilantro sprig garnish.
