Summer in a Bowl Salad Recipe

Ingredients
- 1 pound cooked large shrimp peeled and deveined
- 4 cups cubed seedless watermelon
- 2 large shallots peeled and sliced
- 2 small ripe avocados seeded, peeled and coarsely chopped
- 1 large jalapeno pepper seeded and finely chopped
- 3 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon honey or agave nectar
- 3/4 teaspoon garlic salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
- Fresh cilantro sprigs for garnish
Instructions
- In a serving bowl, combine the shrimp, watermelon cubes, shallots, avocados and peppers. In a jar with a tight-fitting lid, combine the oil, juice, honey, salt, pepper and chopped cilantro. Shake well to emulsify. Drizzle over the salad and toss to evenly coat. Set aside for 30 minutes to meld before serving with a cilantro sprig garnish.
