Carrot Ginger Lime Vinaigrette Recipe

Ingredients
- 4 cups finely chopped carrots
- 3 small garlic cloves peeled and minced
- 1 shallot peeled and coarsely chopped
- 1 3-inch piece fresh ginger peeled and coarsely chopped
- 1 cup rice vinegar
- 1/2 cup toasted sesame oil
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 tablespoons lime juice
- 1 tablespoon chili sauce
- 1/4 tablespoon salt
- 1/8 teaspoon black pepper
Instructions
- Place all ingredients in a blender and blend for 1 minute. Transfer to salad dressing carafe and refrigerate for at least 1 hour or, even better, overnight.
