Complete Meal Chicken Dressing Recipe

Ingredients
- 2 tablespoons vegetable oil
- 1 cup red bell peppers chopped
- 1 cup celery chopped
- 1 cup onions chopped
- 2 tablespoons fresh sage chopped
- 1 teaspoon black pepper
- 2 cups self-rising cornmeal mix
- 2 cups buttermilk
- 1/2 cup all-purpose flour
- 2 eggs lightly beaten
- 4 tablespoons unsalted butter melted
- 1 tablespoon sugar
- 1 teaspoon hot sauce
- 2 cups cooked chicken chopped
Instructions
- Preheat the oven to 425 degrees. Place the oil over medium heat in a 12-inch cast-iron skillet. When hot, add the bell peppers, celery, onions, sage and black pepper. Saute 9 to 10 minutes or until tender. Transfer to a bowl, wipe the skillet clean and lightly grease it with cooking spray.
- In a mixing bowl, combine the cornmeal mix, buttermilk, flour, eggs, butter, sugar and hot sauce. Blend in the reserved pepper mixture and chicken. Pour into the skillet and bake 25 to 30 minutes or until golden brown. Serve warm.
