Fresh Strawberries with Warm Lemon Curd Recipe

Ingredients
- 4 eggs
- 1/2 cup sugar
- 1/4 cup honey
- 5 tablespoons lemon juice
- 1 teaspoon lemon zest finely grated
- pinch salt
- 6 tablespoons unsalted butter cut in pieces
- 1 pint fresh strawberries hulled and quartered
- Mint sprigs for garnish
Instructions
- Place the eggs, sugar, honey, lemon juice, zest and salt in a medium saucepan. Bring to a simmer, stirring constantly. Add the butter and continue stirring 5 minutes longer or until the curd is thick enough to coat the back of a wooden spoon. Place the strawberries in four serving bowls and top with the warm lemon curd. Serve immediately with a garnish of mint.
