Golden Raisin Scones Recipe

Ingredients
- 2 cups all-purpose flour
- 3 tablespoons sugar divided
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 4 tablespoons unsalted butter
- 6 tablespoons heavy cream divided
- 2 eggs
- 1/2 cup golden raisins
- jam of your choice
Instructions
- Preheat the oven to 400 degrees. Lightly grease a baking sheet and set aside.
- In a mixing bowl, combine the flour, 2 tablespoons of sugar, baking powder and salt. Cut in the butter until the mixture is crumbly. Stir in 51⁄2 tablespoons of cream and the eggs. Fold in the raisins and transfer to a lightly floured surface. Knead gently until the dough is sticky. Divide in half and roll out into a circle of 1-inch thickness. Cut the circle into quarters and place on prepared baking sheet. Repeat with the remaining dough. Brush the tops with the remaining cream and sprinkle with the remaining sugar. Bake 13-15 minutes or until golden-brown. Cool slightly on a wire rack. Serve warm or at room temperature with the jam of your choice.
