Ham and Greens Quiche Recipe

Freeze with any leftover vegetables such as carrots, beans or peas
Ingredients
- 2 teaspoons vegetable oil
- 1 cup chopped cooked ham
- 1/2 16-ounce package frozen chopped spinach or collard greens thawed and drained
- 1 small sweet onion peeled and chopped
- 1 1/2 cups shredded pepper Jack cheese divided
- 1 cup milk
- 2 eggs
- 1/2 cup all-purpose flour
- 1/4 teaspoon garlic salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees. Lightly grease a 9-inch pie plate and set aside.
Place the oil in a large skillet over medium-high heat. Add the ham and saute 4 minutes. Stir in the greens and onions and saute 5 minutes longer until tender or until the liquid has evaporated. Layer half of the greens mixture in the prepared pie plate and top with half of the cheese. Repeat layers.
- In a mixing bowl, whisk together the milk, eggs, flour, salt and pepper. Pour over the top layer. Bake 25-30 minutes or until a knife inserted in the center comes out clean. Cool completely on a wire rack.
