Honey Chicken Salad with Yogurt Dressing Recipe

Ingredients
- 2 cups cooked, cubed chicken
- 2 cups honeydew cubes
- 1/2 cup diced celery
- 1/3 cup cashew halves
- 1/4 cup chopped green onions
- 1/4 cup plain, nonfat yogurt
- 2 tablespoons mayonnaise
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/8 teaspoon black peper
- mixed greens
Instructions
- In a mixing bowl, combine the chicken, honeydew, celery, cashews and green onions. In a separate bowl, whisk together the yogurt, mayonnaise, lime juice, honey, salt and pepper. Add to the chicken mixture and toss to evenly coat. Cover and refrigerate at least 2 hours before serving on a bed of mixed greens.
