Marinated Green Beans Recipe

Ingredients
- 1 1/2 pounds whole, fresh green beans trimmed
- 2 cloves garlic peeled and minced
- 1/4 cup olive oil
- 1/4 cup minced fresh parsley
- 1 tablespoon fresh minced tarragon
- 1 tablespoon fresh minced dill
- 2 teaspoons Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 small red bell pepper seeded and thinly sliced
- 1/2 cup slivered toasted almonds
- 3 tablespoons lemon juice
- 1 tablespoon red wine vinegar
Instructions
- Place the green beans over a pot of boiling water and steam for 3 minutes. Rinse in cold water and drain well.
- Meanwhile, in a mixing bowl, whisk together the garlic, oil, parsley, tarragon, dill, mustard, salt and pepper. Place the beans, peppers and almonds in a large, shallow dish. Pour the dressing over the top and toss to evenly coat. Cover and let marinate in the refrigerator overnight. Drizzle with the lemon juice and vinegar and let stand another 10 minutes at room temperature before serving.
