Quick Beef and Bean Gumbo Recipe

Ingredients
- 1 pound ground beef
- 1 onion peeled and chopped
- 1 16-ounce package frozen white shoepeg corn thawed
- 1 15-ounce can great Northern beans drained and rinsed
- 3 14.5-ounce cans stewed tomatoes undrained
- 1 10-ounce package frozen sliced okra thawed
- 1 tablespoon chili powder
- 1 teaspoon Cajun seasoning
- cooked rice hot
- hot sauce
Instructions
- Place the ground beef and onions in a Dutch oven over medium-high heat. Cook, stirring to break up the beef as it browns, for 7 minutes or until no pink remains. Drain and rinse with hot water. Return to the Dutch oven and add the corn, beans, tomatoes, okra, chili powder and Cajun seasoning. Reduce the heat to medium and bring to a boil, stirring occasionally. Cover and reduce the heat to low. Simmer 20 minutes longer, stirring occasionally. Serve ladled over hot cooked rice with hot sauce.
