Red Bell Pepper Marmalade Recipe

Ingredients
- 2 red bell peppers seeded and thinly sliced
- 1 small sweet onion peeled, halved and thinly sliced
- 2 1/2 cups apple cider or juice
- 1/4 cup cider vinegar
- 1/3 cup sugar
- 1 1/2 teaspoons caraway seeds toasted
- 1/8 teaspoon white pepper
- 1/8 teaspoon cayenne
Instructions
- In a large saucepan over high heat, bring 2 cups of water to a boil. Add the bell peppers and onions and return to a boil. Drain and return to the saucepan. Add the cider or juice, vinegar, sugar, caraway seeds, pepper and cayenne. Place over medium-high heat and bring to a boil. Cook 10 minutes, then reduce the heat to medium and cook 25 minutes, stirring occasionally. Remove from the heat and cool 10 minutes. Use immediately over pork or cool completely and refrigerate for later use.
