Spiced Pear Pie Recipe

Ingredients
- 1 Pastry for a 2-crust pie
- 1/2 cup sugar plus 2 teaspoons
- 1/3 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/8 teaspoon ground cardamom
- 3 pounds pears firm, ripe (5 medium), peeled, cored and sliced
- 1/3 cup sorghum syrup
- 1 teaspoon orange zest
- 1 egg lightly beaten
Instructions
- Preheat the oven to 375 degrees. Place aluminum foil in the bottom of a jellyroll pan and set aside. Place 1 pastry in a 9-inch pie plate and set aside.
- Stir together 1/2 cup of the sugar, along with the flour, cinnamon, ginger, nutmeg, salt and cardamom. Add the pears, syrup and zest, tossing gently to coat. Spoon into the prepared crust. Place the remaining pastry over the pear mixture. Fold the edges under and crimp. Cut slits in the top for steam to escape and brush the top crust and edges with the egg. Sprinkle with the remaining sugar.
- Place on the prepared jellyroll pan and bake for 1 hour or until the crust is golden-brown. If the edges start to excessively brown, shield with strips of aluminum foil or a crust guard. Remove from the oven and cool completely on a wire rack before cutting and serving.
