Strawberry Iced Lemon Tea Recipe

- Yield: 4 to 6 servings
- 5 cups water divided
- 8 tea bags
- 1 pound fresh strawberries capped, hulled and cut in half
- 3/4 cup sugar
- 1 cup lemon balm
- Place 4 cups of the water in a large saucepan over high heat. Bring to a boil and remove from heat. Add tea bags and allow to steep for 6 minutes. Remove and squeeze the bags, then discard.
- Meanwhile, place the strawberries in a large tea pitcher and set aside. Place the remaining water and sugar in a small saucepan over high heat, stirring frequently. As soon as the water begins to boil, remove from heat and add the lemon balm. Allow to steep for 10 minutes. Strain into the strawberries through a fine-meshed sieve. Discard the solids. Allow to cool 30 minutes.
- Add the tea, cover and refrigerate until ready to serve. Serve cold over ice.
