Watermelon and Pine Nut Salad Recipe

Ingredients
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 tablespoons fresh chopped basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 cups cubed seedless watermelon
- 1 cup crumbled goat cheese or feta
- 1/4 cup toasted pine nuts
Instructions
- In a large bowl, whisk together the olive oil, lemon juice, basil, salt and pepper. Add the watermelon and goat cheese or feta and toss gently to thoroughly coat. Sprinkle with the pine nuts and serve immediately.
