Frozen Mojito Recipe

Ingredients
- 1 3-ounce package lime gelatin
- 2 tablespoons sugar
- 1 cup boiling water
- 1 cup fresh mint leaves
- 2 12-ounce containers frozen limeade concentrate thawed
- 2 cups cold water
- 1 cup carbonated grapefruit beverage such as Fresca
- 1 cup clear rum or additional grape fruit soda
- additional grapefruit drink for serving
- mint sprigs for garnish
Instructions
- In a small bowl, dissolve the gelatin and sugar in the boiling water. Add the mint, cover and steep 20 minutes. Press through a wire mesh sieve and discard the mint. Add the limeade concentrate, cold water, soda and rum (or additional soda). Transfer to a 21⁄2 quart freezer container and freeze overnight or until set. Scoop into a glass, add 1⁄2 cup of additional grapefruit soda in each serving and garnish with mint. Serve cold.
