Frozen Mojito Recipe

  1. In a small bowl, dissolve the gelatin and sugar in the boiling water. Add the mint, cover and steep 20 minutes. Press through a wire mesh sieve and discard the mint. Add the limeade concentrate, cold water, soda and rum (or additional soda). Transfer to a 21⁄2 quart freezer container and freeze overnight or until set. Scoop into a glass, add 1⁄2 cup of additional grapefruit soda in each serving and garnish with mint. Serve cold.
