Spicy Sausage Stew with Ale Recipe

Ingredients
- 8 slices bacon
- 1 sweet onion peeled and thinly sliced
- 2 large yellow bell peppers thinly sliced
- 1 large orange bell pepper thinly sliced
- 3 cloves garlic peeled and thinly sliced
- 12 ounces spicy Italian sausage cut in 1/2-inch slices
- 1 teaspoon crushed red pepper
- 1 tablespoon paprika
- 6 Roma tomatoes coarsely chopped
- 1 cup dark, strong beer
- 1 bay leaf
- salt and black pepper to taste
Instructions
- In a large Dutch oven over medium-low heat, cook the bacon until light brown, around 8 minutes. Add the onions and increase the heat to medium. Cook, stirring frequently, for 5 minutes. Add the peppers and garlic and cook an additional 5 minutes, stirring often.
- Add the sausage, crushed red pepper and paprika. Cook 2 minutes and add the tomatoes. Cook 5 minutes, stir in the beer and add the bay leaf. Partially cover and reduce the heat to low. Cook 15 minutes and season with salt and pepper. Serve warm.
- Note: This stew can be made up to two days ahead and refrigerated. Gently reheat before serving.
